Hausa KoKo

Hausa Koko is a spicy millet porridge, originating as Ghanaian street food. Culturally, it is prepared as a breakfast recipe or a late afternoon meal. Koko can be eaten with bread, koose, waffles and other sides.
Premade
- Stovetop: Add desired amount of Koko to your saucepan of choice, heat on medium and stir until smooth.
- Microwave: pour Koko into a microwave safe bowl, heat for a few minutes, occasionally checking and stirring the mixture until warm and smooth
- Add Milk, Sugar or Honey to taste
From Scratch
Ingredients
- 1/2 cup fermented corn or millet dough
- 3 cups water
- 1 pinch salt
- 1/4 teaspoon ground cloves
- 1/2 teaspoon ground ginger
- 1/4 teaspoon hot chili powder
- Optional: sugar or honey to taste
Instructions
- Place fermented corn or millet into pot
- Add 1 cup of water to and use a spoon (preferably wooden) to mix in the millet until smooth
- Place mixture on high heat and bring to simmer stirring occasionally
- Add 2 cups of boiling water, the mixture may form lumps during this process, whisk lumps away to to keep porridge smooth
- Spice the porridge with ginger, chili powder and grounded cloves
- When ready, add desired amount of milk, sugar or honey and enjoy
