Hausa KoKo

Hausa Koko, Ghana West Africa

Hausa Koko is a spicy millet porridge, originating as Ghanaian street food. Culturally, it is prepared as a breakfast recipe or a late afternoon meal. Koko can be eaten with bread, koose, waffles and other sides.

Premade

  • Stovetop: Add desired amount of Koko to your saucepan of choice, heat on medium and stir until smooth. 
  • Microwave: pour Koko into a microwave safe bowl, heat for a few minutes, occasionally checking and stirring the mixture until warm and smooth
  • Add Milk, Sugar or Honey to taste
Tip - You can also add groundnuts or granola to your porridge for a healthier meal 

 

From Scratch

Ingredients

  • 1/2 cup fermented corn or millet dough
  • 3 cups water 
  • 1 pinch salt
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon hot chili powder
  • Optional: sugar or honey to taste

Instructions

  1. Place fermented corn or millet into pot
  2. Add 1 cup of water to and use a spoon (preferably wooden) to mix in the millet until smooth
  3. Place mixture on high heat and bring to simmer stirring occasionally
  4. Add 2 cups of boiling water, the mixture may form lumps during this process, whisk lumps away to to keep porridge smooth
  5. Spice the porridge with ginger, chili powder and grounded cloves
  6. When ready, add desired amount of milk, sugar or honey and enjoy
